Instructions:
1. Preparation: Begin by heating oil in a large pan over medium heat. Add the finely chopped onions and sauté until golden brown.
2. Adding Spices: Add the minced garlic and grated ginger to the onions, and cook for another couple of minutes. Then add cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Stir well to mix the spices.
3. Cooking Beef: Add the beef pieces to the pan, turning the heat to high. Sear the beef until it is browned on all sides.
4. Tomato Mixture: Add the pureed tomatoes and green chilies to the pan. Stir well and cook for a few minutes until the tomatoes are well integrated into the mixture.
5. Simmering: Reduce the heat to low, cover the pan, and let it simmer for about an hour, or until the beef is tender. Stir occasionally and add a bit of water if the mixture becomes too dry.
6. Finishing Touches: Once the beef is tender, sprinkle garam masala over the curry and stir well. Cook for an additional 5 minutes to allow the flavors to meld.
7. Serving: Garnish with fresh coriander and serve hot with rice or naan.
